Budget-Friendly Meal Planning: Week 1

We are kicking off a new series this week, Budget-Friendly Meal Planning. I am sharing with you weekly meal plans that I will be making at my home using affordable recipes. So join me and lets get cooking together!

This meal plan includes all of our breakfast, lunch, dinner, snacks and dessert for the week and you can find a printable meal plan and grocery list at the end of the post to make your week super easy! I am shopping at Aldi and Walmart because they are closest to me with a budget around $100 (does not include things we always have on-hand like flour and olive oil). These meal plans will feed a family of three, so adjust to your family size! Make shopping even easier with Walmart+!  Monday

Dinner Swiss Pan Burgers & Onion Rings

I made these yummy egg muffins on Sunday night so they were prepped for the week. I modified the recipe and used 8 whole eggs and 1/4 cup each of shredded cheese, shredded kale and bacon (I like to throw my kale and bacon strips in the food processor so they are finely chopped). 

My Turkey Club Sandwich isn’t a real club sandwich. I cheat a little and just layer together sandwich bread, deli style turkey breast, bacon, greens, dijon mustard and mayo. One day I will have time to make actual Club Sandwiches but until then this is my quick fix. 

My husband was very excited to see this burger on the menu with our favorite onion rings recipe. Who doesn’t love a good burger? We’re not huge fans of Swiss cheese so I swapped it out for Gouda! I paired our burgers with the onion rings below.

These onion rings are a big hit with our family! I love to use this recipe when I have extra onions lying around that need to be used up. The crispy coating will make even non-onion ring loving people rejoice!

Dinner Herb Roasted Lamp Chops & Red Mashed Potatoes

We repeat meals to make the most of our groceries for the week. I find its very cost effective. I paired our Egg Muffins with some toast for variation but you can also add salsa or avocado on top of your muffin too. 

I grilled some chicken in some olive oil with salt & pepper. I layered it on top of kale, sliced cucumbers and dressing. (If we have leftovers from the night before, I will often use that as our salad topping). 

We are excited to try this recipe this week! I got some beautiful grass-fed lamb chops that were on sale at Aldi. I plan on pairing this with red-skin mashed potatoes and sauteed green beans.


Wednesday

Dinner Pork Chops with Apples & Onions

Its the last day of the Egg Muffins. It really was such a treat to not have to scramble (egg-cellent pun) to make breakfast every morning, which means I got to press that snooze button a couple times.

Today is a Turkey sandwich with a side of mini cucumbers & hummus to help us make it through the middle of the week. If it was cold outside, I would pair this sandwich with some tomato soup. 

I love that this is a one pan dish, making clean up a breeze. The fresh herbs really elevate this meal but you could easily swap them out for dried if you have that on-hand (Use 1/3 of the amount for dried).


Thursday

I adore everything Ree Drummund makes but this recipe ladies & gentleman, is by far my favorite. We make this recipe a couple times a week. Try it, I promise you'll love it!

I had some leftover apples & onions from the night before so I topped my salad greens and chicken with it. It was a winning combination and I didn't even need additional dressing! 

We are repeating the lamb dish from earlier this week. This hearty meal would be perfect on a cold night in the winter, by a fire, while wearing cozy pajamas & slippers. Now I am day dreaming...


Friday

This smoothie recipe is like the master plan for all smoothies. I love using whatever I have on-hand to create delicious blends for my family. This week we are doing berry smoothies and peanut butter & banana!

We are doing one more turkey sandwich this week and I am pairing it with a small bag of chips (splurge I picked up outside of the grocery list) & an orange. 

I picked up some fresh parmesan chicken cutlets that were on sale at Aldi's and paired it with some fettuccine alfredo. Some warm, butted frendh bread would take this meal over the top!

My daughter and I love to do baking on the weekend! This recipe right here is our goal for this weeks baking adventure. It has all the things we love like fresh berries and chocolate all combined into a beautiful pastry. 


Saturday

Dinner Pizza Movie Night

We like to make a big breakfast on the weekends. This week we are doing scrambled eggs, bacon and some toast with butter or jam. 

Things are pretty busy at the shop on Saturdays. I like to grab leftovers from the night before and use as our lunch. No one complains when its yummy pasta!

Pizza Movie Night is a tradition we started many years ago and its become a favorite in our house. We rotate who gets to pick the movie and cozy up with some pizza (our favorite is Little Caesar's).  


Sunday

See, I told you I make these pancakes a couple times a week. If you tried this recipe on Thursday then you know why. If you didn't, what are you waiting for? Try it now!

At the end of the week, I like to use up whatever is in my fridge. I mix together the extra veggies and a protein from the week into a yummy salad known as "Everything but the kitchen sink salad". 

Taco's are a pretty easy go to meal. Sometimes I like to change it up by making oven baked tacos. I loosely follow this recipe but I don't add the re-fried beans (my husband hates them) or tomato sauce.
